It's summer and these lovely little fruits (yes, they are a fruit!) are on sale everywhere. For me, that's enough reason to celebrate. Here's some of my favorite ways to eat (and eat and eat) avocados.
1. For Breakfast: You might say I'm crazy, but I love avocado in the morning. Layer it on a cracker or some pita bread, add some turkey if you need the protein and voila - instant breakfast! I like having some fat in the morning to keep off the hunger and it feels like a real treat even though it's healthy. Sometimes I even slip some into my smoothie - it gives it a nice creamy texture and just tastes, well, green! I'll be back with some of my own recipes (MUST REMEMBER TO TAKE PHOTOS) but here's a yummy blueberry version from Dr. Oz.

2. For Lunch: I'm really enjoying chopped veggie salads for lunch this summer. It's light and you can eat a ton of it without feeling bad. What? I get hungry during the day! Usually, I just layer a ton of whatever I have on hand in a bowl. Usually it consists of lentils (you know I love them), raw spinach, corn, green beans and avocado on top. I use the steamer bags of frozen veggies and just pop two in the microwave at the start of the week. So easy! Sometimes I top with a squirt of olive oil and some lemon juice, but a yummy salad dressing would be easy too - just pack separately so you're veggies stay fresh!

3. Dinner: Omigosh you guys. Avocado fries are the new cool fried food. Follow this recipe, from Adventures in Cooking.

The basics are pretty easy. Cut your avocado in strips, douse them in beaten eggs then dredge them in a mixture of breadcrumbs, lemon salt and cumin (the cumin is a really nice touch.) Drop them in a hot pan of olive or vegetable oil and remove when crispy and browned. 1 avocado is really enough for 2 people -- The Boy and I made 2 the first time and got a little green around the gills...
The secret really is the Cilantro Lemon Dipping sauce. Mix mayo, cilantro and lemon juice either by hand or in a blender. Amazing!

Deleteomg to the avocado smoothie and the fried avocado! My own boy isn't a hugeee fan of avocado(unless it comes as guac from chipotle), and sometimes a whole avocado is just too much...any tips for storing the other half?
ReplyDeleteoh yeah, ANYONE will eat the fried avocado, I'm sure! Normally I use the side without the pit first, and just leave the rest in the skin with the pit. Just scrape off whatever portion browns a bit and the rest should be good to go! I'll use one all week sometimes!
DeleteI've only ever had it chopped on top of a salad and was underwhelmed. These recipes look delicious though so I'll have to give it another try. I wonder if I can get the kids to try it? Maybe the smoothie . . .
